Southern Fried Chicken

Ingredients
- 2 Chicken breasts cut into bite sized pieces.
- 8 Chicken Drumsticks Skin removed
- 4 Weetabix
- 2 Eggs beaten
- 1 chicken oxo cube
- 1 tsp mixed herbs
- 1 tsp paprika
- 0.5 tsp mild chilli powder
- 0.5 tsp onion powder/ granules
- 0.5 tsp garlic powder/granules
- 2 tsp salt
- 1 tsp freshly ground black pepper
Instructions
- Preheat oven 200ºc Gas Mark 6
- Blend all the ingredients apart (from the chicken and the eggs ) for 10 seconds and Empty the mixture into a wide bowl.
- Add the chicken pieces to the egg and coat well
- Then add the chicken to the weetabix crumb mixture and coat evenly. Place the chicken pieces evenly on a baking sheet covered with baking parchment
- Cook for about 15-20 minutes turning once.

free on EE & Original if you use Weetabix as HEB
We made a "takeaway" by adding some chips done in the actifryer and BBQ beans by heating a portion of baked beans with a tablespoon of BBQ sauce. Adds a couple of Syns but so worth it.
