Salmon with Herby-Walnut Mushrooms

My second meal from Hello Fresh slightly adapted to be Slimming World Friendly

Total Time 40 minutes
Servings 2 People

Ingredients

  • 2 fillets Fresh Salmon
  • 1 Celeriac
  • 1 Punnet Chestnut Mushrooms
  • 3 tbsp Fresh Flat leaf Parsley Chopped
  • 2 sprigs Fresh Thyme
  • 1 Lemon
  • 45 g Chopped Walnuts
  • 2 tbsp Olive Oil
  • Salt & Pepper
  • 1 clove Garlic

Instructions

  • Peel the celeriac, slice into half cm slices then cut again into chips. Toss in a bowl with a little olive oil & rock salt. Spread on a baking tray and bake int he oven at 200 degrees for 30 minutes, turning once halfway through
  • finely chop the garlic, parsley, thyme and walnuts and add the zest and juice of half of the lemon. Bash with the end of a rolling pin and add a little salt & plenty of freshly ground pepper. Then add the sliced mushrooms and stir
  • Place the mushroom mix on a baking tray and top with the salmon fillets. Bake for about 15 minutes in the oven until the fish is opaque throughout.
  • Serve with the salmon on top of the bed of mushroom mix with the celeriac fries. A wedge of lemon and some finely chopped parsley finish it off perfectly

Notes

The meal is Syn free if using the walnuts as your HeB and use frylite instead of the olive oil.
However, I got a far better result with the olive oil and was worth the 3 syns
