Pork Stroganoff
Adapted from the Hairy Bikers "Make it Easy" book to make it Syn Free

Ingredients
- 1 Onion Thinly sliced
- 200 g Mushrooms Thinly Sliced
- 500 g Pork Medallions (All fat trimmed off) I used pork fillet and sliced
- 1 tsp Smoked Paprika Heaped
- 200 ml Pork Stock (Chicken or Beef would work)
- 75 ml Half Fat Creme Fraiche
- Salt & Pepper to taste
Instructions
- Gather all your ingredients
- Spray a large frying pan with low calorie spray and fry the sliced onion and mushrooms until soft and starting to brown.
- Remove the onions and mushrooms and set aside.With a little more spray, add the pork medallions and cook, turning regularly so all sides are cooked.
- Once cooked, return the mushroom and onion mix to the pan and add the paprika, stir then add the stock and season with salt and plenty of black pepper.
- Once the sauce has thickened considerably (Think cream not water), stir in the creme fraiche and stir to warm through. Don't let it boil!
- I served with baked potatoes and corn to make a gorgeous, almost syn-free meal
